Rinse and drain the wheatberries.

Place them in a saucepan with the water. Bring to a boil, re

duce heat to a simmer, cover loosely, and simmer until ten

der, about 1 hour. Check from time to time that they are not

boiling dry. Add more water if necessary.

When the wheatberries are tender, drain and transfer to a

shallow pan to cool.

Combine the wheatberries, tomatoes, scallions, parsley, mint,
