Garlic Mashed Potatoes

Method 1: Simmer 6-8 whole, peeled cloves of garlic with the potatoes. Puree the garlic and the potatoes together.

Method 2: Puree 1 or 2 heads roasted garlic (p. 567) and mix into the potatoes before adding cream.

Ancho Mashed Potatoes

Add Ancho Sauce (p. 191) to taste to whipped potatoes before adding milk. Reduce the quantity of milk as necessary to achieve the proper consistency.
