Eggs, lightly beaten

Chicken fat or butter

Water or chicken stock

Pepper

Put the buckwheat in a sauté pan over moderate heat.

Add the eggs and stir vigorously so all the grains are coated with egg.

Continue to cook, stirring, until the grains are dry. Add the fat and stir.

Add the water or stock, salt, and pepper. Bring to a boil, cover, and set over low heat to simmer for 10 minutes, until the liquid is absorbed.
