Procedure

Combine all ingredients in the bowl of a mixer. Mix at low speed with the paddle attachment until the mixture forms a dough.

Remove from the mixer and knead lightly on a floured board until the dough holds together well.

Divide the dough into 4 or 5 pieces. Roll each piece into a cylinder 1 in. (2V2 cm) in diameter. Wrap in waxed paper or plastic film and chill. Slice the dough into thin rounds a little less than 54 in. (V2 cm) thick. Place on greased baking sheets.

Bake at 450°F (230°C) about 10 minutes, until crisp and lightly browned.

Serve hot or cold as an hors d'oeuvre or as a soup accompaniment.

Variations

Cheese Straws

Roll out the dough like pie dough, slightly less than 14 in. (12 cm) thick. Cut into strips, 14 x 3 in. (12 x 7V2 cm). Bake as in basic recipe.
