1. Refer to the general procedures for making sausages on pages 836-837. Some of these points are not repeated in each recipe.
2. Ratios of fat to lean are not specified in most of the recipes. Refer to the explanation of fat-lean ratios on page 832 and adjust the amount of fat in the recipes as desired.
