This lettuce variety (Lactuca sativa var. angustata) is also called "asparagus lettuce" and "stem lettuce." It comes from China and combines celery and lettuce traits. The edible part is the enlarged seed stalk, not the leaves at the end of the stalk. Seed is available from Nichols and Kitazawa. Grow like a summer lettuce. Use the stalks like celery—either raw in salads, as sticks with dips, or cooked like asparagus and served with a sauce. Or stir-fry with meat and daikon chunks and serve with a Chinese sauce.
