4 slices (90 g) Swiss-style cheese, halved 8 cherry tomatoes, quartered

7 oz. (200 g) burghul or cracked wheat 2 medium tomatoes, peeled, seeded and finely chopped

1 Lebanese or small cucumber, finely diced

5 tablespoons finely chopped fresh mint leaves 3/< cup (30 g) finely chopped fresh flat leaf parsley leaves

2 spring onions, finely chopped 2 tablespoons olive oil juice of 1 lemon
