Chive and cheesy bacon muffins

5 oz. (150 g) bacon, finely chopped VU cups (215 g) plain flour 2 teaspoons baking powder '/? teaspoon salt

2 tablespoons chopped fresh chives 2 tablespoons freshly grated parmesan 1 large egg

V. cup (185 ml) buttermilk '/. cup (60 g) butter, melted

1 Preheat oven to 356°F (180°C). Cook bacon in dry frying pan on medium heat, stirring until crisp. Drain on paper towel; cool.

2 Sift flour, baking powder and salt into large bowl. Add bacon and remaining ingredients; mix until well combined.

Spoon into lightly oiled muffin pan. Bake 12 to 15 minutes, or until cooked. Turn out onto wire rack to cool.
