The New American Plate

These recommendations are based on strong scientific evidence. A panel of experts from around the world, convened by AICR, evaluated 4,500 studies on the links between diet and cancer. Their conclusions were published in Food, Nutrition and the Prevention of Cancer a global perspective and indicate that diet is associated with reduced risk of cancer in 18 sites. This panel identified 192 studies that show vegetables and fruits to be cancer protective. There is a strong consensus today among scientists that a diet high in vegetables, fruits, whole grains and beans reduces the risk of cancer. They have concluded that if everyone ate such a diet, exercised regularly and maintained a healthy weight, there would be 30 to 40 percent fewer cases of cancer in the U.S. Furthermore, this predominantly plant-based diet also reduces risk of heart disease, stroke and adult-onset diabetes.

Many extruded snack foods are fried after extrusion to remove moisture and modify texture and flavor. Response surface methodology was used to determine which extrusion parameters would limit oil absorption by a multigrain chip during frying (Osman et al., 2000). Oil content ranged from 20 to 35 as compared to a commercial product that has only 21 oil, suggesting that further improvements are necessary. Extrusion can be used to aid oil extraction since oil is freed during the cooking and shearing operations (Nelson et al., 1987).

American Institute for Cancer Research American Institute for Cancer Research The word is out that a plant-based diet helps to fight obesity and chronic illnesses such as heart disease, adult onset diabetes and cancer. Many Americans have begun following AlCR's advice to fill their plates with two-thirds (or more) vegetables, fruits, whole grains and beans and one-third (or less) fish, poultry or red meat. That is, they are trying to take the spotlight off animal protein and push vegetables center stage. To do that, they reduce their serving of meat to no more than three ounces - the size of a deck of cards. Then they add three or more servings of vegetables, fruits, whole grains and beans. That's the New American Plate.

The White Flours

In your grocery store, you may find either bromated flour or flour that has not been bromated. Bread flours have to age or oxidize before they perform well. The time and expense of natural oxidation is not practical in commercial operations and the results are not often uniform. So the industry has explored means of speeding the process along and using bromates is one of them. The FDA has ruled bromates to be safe and legal (though California outlawed bromates in 1991 as a possible carcinogen and most of Europe will not allow bromates). If you are not comfortable with bromates, look for flour that has been treated with ascorbic acid (Vitamin C) or other chemicals instead of bromates.

Water

A phytochemical is any of several hundred compounds that are found in foods in tiny amounts and may help reduce the chance of cancer or heart disease. The list of phy-tochemicals includes flavonoids, isoflavonoids, phenols, lycopene, indoles, dithiolthiones, and sulfora-phane. These chemicals are not yet well understood, and research is continuing. Phytochemicals are found most abundantly in whole grains, fruits, and vegetables.

Meat on the Side

If you eat red meat like beef, pork or lamb, choose lean cuts and limit yourself to no more than 3 ounces cooked (4 ounces raw) per day. That's about the size of a deck of cards. Findings from AICR's expert report show that diets high in red meat probably increase the risk of colon cancer.

Lycopene The king of this nutrient hill is the tomato, and there is very good reason to think it will help protect you from prostate cancer. An immuno-stimulant action that may further help the body fight cancer (as well as fungal diseases and other infections) has also been documented. However, extensive research will be required before its potential is fully understood.

Pinto Bean Burrito

Saturated fats are behind many health problems, and should be omitted form your diet. They are behind heart disorders and arteriosclerosis (hardening of the arteries). High intake of saturated fats have been shown to elevate serum cholesterol, and contribute to heart disease and cancer. Do not consume saturated fats They slow the liver's ability to remove arter-clogging LDL (low-density lipopreteins) from the blood. However, the nomounsaturated fats aid in removing LDl (bad fats) from the blood stream.

Seafood

With all of the health benefits, we simply can't afford not to eat seafood on a regular basis. The fats in fish have been shown to decrease inflammation and pain, protect against free-radical damage, improve blood lipids (including cholesterol and triglyerides), improve heart health, decrease risk of cancer, reduce body fat, and more.

Pau darco

The wood of the South American tree pau d'arco is famously resistant to fungi. In the traditional medicine of Brazil, a poultice or decoction made from the tree's inner bark is applied to the skin to treat fungal infections as well as conditions such as eczema, psoriasis and skin cancer. Laboratory studies support a number of pau d'arco's traditional uses, including fungicidal activity. 0 DOSAGE Add 10 g inner bark of pau d'arco to 2' j cups (600 ml) water and simmer gently for 15 minutes. Cool it to a comfortable temperature and then use the decoction as a compress or poultice on the affected area twice daily. For more detailed instructions, see page 194.

Antinutrients

Glucosinolates are found in many commercially-important Brassica species, and may have a role in cancer prevention (Van Poppel et al., 1999). Extrusion alone likely has little effect on retention of glucosinolates (Fenwick et al., 1986). Canola total glucosinolates were reduced by added ammonia during extrusion (Darroch et al, 1990). Although extrusion with ammonium carbonate did not completely destroy glucosinolates in rapeseed meal, the process did improve nutritional parameters in rats fed the extruded versus unprocessed rapeseed meal (Barrett etal, 1997). Soy isoflavones have estrogenic activity, and thus may protect post-menopausal women from osteoporosis and heart disease, while men may receive protection against prostate and other testosterone-dependent cancers. As a potent antioxidant, lycopene also supports the heart and blood vessels and may help to reduce the risk of cardiovascular disease. Disease Prevention

Physical activity has important positive effects on virtually all of the body's systems musculoskeletal, cardiovascular, respiratory and endocrine.
