When freshly harvested, all nut kernels have high moisture, between 35 and 50 percent, of the nut meat. The tough, airtight shell protects them from animals, insects and bacteria, and slows deterioration. But as soon as they crack the shell, the kernels are very susceptible to microorganisms. A particularly dangerous mold produces a carcinogenic material called aflatoxin in the kernel. Before they are processed, inspectors screen nuts and seeds for the presence of aflatoxin. If they find more than trace, they cannot use the nuts for human consumption. They can still press and use the oil from them because aflatoxin is not soluble in oil and remains with the rest of the meat.

Nigella sativa L. has not shown the specific inhibitory activity against tyrosinase (Mukherjee et al., 2001). The oil has microbial activity and has been investigated as antimicrobial (Minakshi and Banerjee, 1999), antiococeptive (Abdel-Fattah et al., 2000) and carminative (El-Dakhakhny, 2000). Nigella oils have played a significant role for altering the liver damage induced by Schistosoma mansoni infection in mice and helped in improving the immunological host system and to some extent with its antioxidant effect (Mahmoud et al., 2002). Recent studies had revealed that extract of Nigella sativa L. has a strong immunomodulatory and interferon-like activity (Medenica et al., 2000). It inhibits cancer and endothelial cell progression, and decreases the production of the angiogenic protein fibroblastic growth factor made by tumour cells.

Oil content ranged from 20 to 35 as compared to a commercial product that has only 21 oil, suggesting that further improvements are necessary. Extrusion can be used to aid oil extraction since oil is freed during the cooking and shearing operations (Nelson et al., 1987).
In April of 1995, Dwaynes' family posted a note on the BSA board on Prodigy, that Dwayne had been diagnosed with a tumor on his esophagus and would be off-line for a time, due to chemo-therapy treatments he would be taking, to try and rid him of the cancer. The time and expense of natural oxidation is not practical in commercial operations and the results are not often uniform. So the industry has explored means of speeding the process along and using bromates is one of them. The FDA has ruled bromates to be safe and legal (though California outlawed bromates in 1991 as a possible carcinogen and most of Europe will not allow bromates). If you are not comfortable with bromates, look for flour that has been treated with ascorbic acid (Vitamin C) or other chemicals instead of bromates.
