Poached Pears with Brandied Almond Cream

Easy, elegant, and healthful, this dessert is a heavenly finish to any meal.


4 firm, ripe Bosc pears, peeled, halved vertically, and cored juice of 1 lemon

Brandied Almond "Cream"

1 12.3-ounce package extra-firm silken tofU, drained V3 cup pure maple syrup

2 tablespoons apricot brandy or frozen apple juice concentrate

1 cup white wine or apple juice V2 cup pure maple syrup V4 teaspoon almond extract

V4 teaspoon almond extract V4 cup sliced almonds for garnish (optional)

Place pears in a large bowl, drizzle with lemon juice, and set aside.

Combine wine, maple syrup, and almond extract in a large saucepan, and warm over medium-high heat for 2 minutes. Reduce heat to medium-low, and add pears. Cover and simmer for 15 minutes, or until pears are tender when pierced gently with a fork. Using a slotted spoon, gently remove pears to a large bowl. Raise heat to medium high, and bring the poaching liquid to a boil. Cook, stirring frequently, for about 5 minutes, or until liquid is reduced by about a third and is the consistency of thin syrup. Pour over the pears. Cover and refrigerate for up to 4 hours.

For the "Cream": Place tofu in food processor. Blend until smooth, about a minute or so, scraping down once with a spatula. Add the maple syrup, brandy, and almond extract. Process for 3

Rt vther THAN the lite that I usually prefer, this dish calls for regular Mori Nu silken tofu, because of its denser texture, which mimics the mouthfeel of heavy cream.

For a lovely presentation, cut the poached pear halves lengthwise into thin slices, leaving the slices attached at the stem end. Transfer pear to a plate, using a metal spatula. Press pear gently at the base to fan out slices. Spoon syrup over fanned pear and place a dollop of almond "Cream" alongside. Sprinkle with sliced almonds if desired.
